Cherries are picked ripe and processed at farm level across a number of small wetmills.
Once fermented and washed, coffee is dried on a mixture of concrete patios or tarpaulins on flat land.
Beans are sun dried, for approximately 8 to 15 days, weather dependent, generally being closer to the 8 days.
Founded in 1994 by 31 farmers in the Jinotega region of northern Nicaragua, Cooperativa de Servicios Múltiples Sacaclí (Sacaclí for short) was established as a multi-purpose cooperative to improve the living and working conditions of rural producers who had limited access to finance, agricultural inputs and markets. From modest beginnings in a small rented room and in an area with poor roads, limited communications and no reliable electricity, the organisation has developed into a substantial farmer owned enterprise serving more than 500 members.
